Ingredients of Amritsari Kulcha

1 cup all-purpose flour1 tablespoon virgin olive oil

For Filling

1 potato1/2 teaspoon cumin powder
1/2 green chilli1 pinch chaat masala
1/4 teaspoon red chilli powder1/4 teaspoon coriander leaves
1/2 onion

For Seasoning

  • salt As required

For Dough

1/2 teaspoon baking powder2 tablespoon lukewarm milk
1/4 teaspoon baking soda1/2 teaspoon sugar
2 teaspoon refined oil2 tablespoon yoghurt (curd)

How to make Amritsari Kulcha

Step 1: prepare the flour

  1. Take a large pot and sift the flour in it.
  2. Add baking powder, baking soda, yogurt, and fine oil.
  3. Then add sugar and salt to the flour and mix well with your fingers.
  4. Add warm milk to the flour and knead the mixture to make a stiff dough.
  5. Cover with a damp cloth and set aside.

Step 2: Prepare the potato filling. To make the stuffing for kulcha

  1. Take boiled potatoes and mash them in a bowl.
  2. Combine finely chopped onion and green pepper with mashed potatoes.
  3. Add chaat spices, coriander leaves, red chili powder, and cumin powder to the mixture.
  4. Sprinkle salt and mix the ingredients with a spoon.

Step 3: Roll the kulchas.

Now take the flour and divide it into two equal parts. Roll each part into a ball and then flatten the ball using a rolling roller. Place one tablespoon of the potato filling in the middle of the flattened flour and close the dough well. Sprinkle some flour on it and roll it again.

Step 4: Toast toast on both sides

Take a non-stick pan, add olive oil, and heat over medium heat. When the oil bubbles start to rise, gently place the kulcha in the pan and cook for one minute. Turn the dough over and cook on the other side until both sides are crispy and golden brown. When done, serve hot with Amritsari Chhole.
