First fry the chopped onion in hot ghee or oil till golden. Stir in the spice powder, ginger-garlic paste for one minute. Then add the mutton and cook until the meat is slightly brown. Add chopped green peppers and tomatoes, water and salt. Mix well and boil. Let it cook on low heat for another 30-40 minutes. Add molasses and vinegar and cook for another 5-6 minutes. Remove from the heat and garnish with fresh, finely chopped coriander leaves.

To make shali, cut the potatoes into thin straws. Soak them in cold salt water for a few minutes. Drain the water and dry the potatoes. Fry till golden brown and crispy. Remove excess oil from the potatoes and serve hot with a fork.
